  • 2 tablespoon(s) Grace vegetable Oil
  • 2 teaspoon(s) ginger, grated
  • 1 tablespoon(s) Grace Curry Powder
  • 1 medium onion, chopped
  • 1 stalk(s) escallion, chopped
  • 1 tablespoon(s) garlic, chopped
  • 1 whole scotch bonnet pepper
  • 1 sprig(s) thyme
  • 1/2 packet(s) Grace Coconut Milk Powder
  • 3 1/2 cup(s) water
  • 3 1/2 cup(s) water
  • 400 grams Grace Long Grain Rice
  • 1 can(s) Grace Mixed Vegetables, drained

Curried Rice Directions

  1. Heat Grace Vegetable Oil in a skillet and use to saute ginger, curry powder, chopped onion, escallion, garlic, whole scotch bonnet pepper and thyme.
  2. Whisk together the Grace Coconut Milk Powder, the water and salt and pour over the sauteed seasonings and bring to a boil.
  3. Add the Grace Long Grain Rice, stir well and bring to a boil.  Lower the flame, cover and steam for about 25 minutes or until the rice grains are tender.
  4. Fold in the drained Grace Mixed Vegetables using a fork.  Cover and heat for a further 2 minutes.
