Heat Grace Vegetable Oil and use to fry the diced tofu. Drain and set aside.
Fry diced potatoes, drain and set aside.
Pour 1/2 cup of the hot oil in a sauce pan and allow to heat. Add the mustard seeds and allow seeds to pop.
Mix in the grated ginger, diced tomatoes, cumin seeds, hot pepper sauce and salt and cook for about 3-4 minutes. Mix in the turmeric powder and water and stir well.
Fold in the fried tofu and Irish potatoes and allow to simmer for about 5 minutes.
To Serve: Serve with steamed Grace Brown Rice and a vegetable salad.
