  • 1 can(s) Grace Tuna in Oil, drained
  • 1 can(s) Grace Whole Kernel Corn, drained
  • 1 can(s) Grace Green Peas, drained
  • 1 medium onion, chopped
  • 1 medium tomato, deseeded and diced
  • 1 medium green sweet pepper, diced
  • 1/4 cup(s) celery, thinly sliced
  • 1 stalk(s) escallion, thinly sliced
  • 1 sprig(s) fresh parsley, finely chopped
  • 4 tablespoon(s) Grace Mayonnaise
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) black pepper
  • To Make Breadfruit Moulds:
  • 1 whole breadfruit, cut into thin strips
  • 2 cup(s) Grace Vegetable Oil

Breadfruit Basket with Tuna Salad Directions

  1. Combine all ingredients in a salad bowl and mix well.
  2. Cover and put to chill for 30 minutes
  3. Serve in individual breadfruit moulds.

    To Make Breadfruit Moulds:
  4. Line a ladle with six or eight overlapping layers of breadfruit strips.  Use a second ladle to firmly hold the breadfruit strips together.
  5. Submerge both ladles in the heated vegetable oil and fry until lightly browned.
  6. Drain on absorbent paper.
