Marinate chicken thighs by pouring oil and wet seasoning on and set for 1 hour or over night
Pre heat one side of grill tmedium thigh temperature and other side tlow temperature
Start by grilling on the side of the grill with high heat. Creating a char and sealing in juices. Do this on either side of for 2 minutes.
Transfer thighs tside with low heat and let it finish cooking approximately 8-10 minutes.
Pineapple relish:
2 Grace tin pineapple rings - diced (liquid of 1 tin)
2 tablespoon lemon juice
3 sprigs cilantro
salt and black pepper ttaste
Make this by simply combining all ingredients and place in fridge to allow flavours to develop
