  • 3 tablespoon(s) soy sauce
  • 1 teaspoon(s) ginger, minced
  • 2 tablespoon(s) honey
  • 2 tablespoon(s) medium dry sherry
  • 1 tablespoon(s) Grace White Vinegar
  • 2 clove(s) garlic, minced
  • 1/2 teaspoon(s) salt
  • 2 whole chicken breasts, deboned

Alexander's Chicken Directions

  1. Mix together soy sauce, minced ginger, honey, sherry and vinegar.  Place the minced garlic on the work surface, sprinkle with salt and mash to a paste using the side of a knife.  Add garlic paste to the soy sauce mixture.
  2. Flatten the chicken breasts between two sheets plastic wrap until they are about 1/2 inch thick.  Place the flattened chicken breasts in the soy sauce mixture and allow to marinate for 20 minutes.
  3. Place the flattened chicken breasts on a lightly greased tray and bake at 180°C (350°F) for 30 minutes or until pieces are browned on all sides.
  4. While the chicken is baking, boil the reserved marinade until it is reduced by a half.  Brush the chicken with reduced marinade.
  5. Reduce the oven temperature to 160°C (325°F) and bake for a further 15 minutes.
  6. Remove from oven, transfer to a cutting board and cut on the diagonal into 1/2 inch thick pieces.

    To Serve:  Serve with a creamed yam or roast potatoes and a garden salad.
