Mix together soy sauce, minced ginger, honey, sherry and vinegar. Place the minced garlic on the work surface, sprinkle with salt and mash to a paste using the side of a knife. Add garlic paste to the soy sauce mixture.
Flatten the chicken breasts between two sheets plastic wrap until they are about 1/2 inch thick. Place the flattened chicken breasts in the soy sauce mixture and allow to marinate for 20 minutes.
Place the flattened chicken breasts on a lightly greased tray and bake at 180°C (350°F) for 30 minutes or until pieces are browned on all sides.
While the chicken is baking, boil the reserved marinade until it is reduced by a half. Brush the chicken with reduced marinade.
Reduce the oven temperature to 160°C (325°F) and bake for a further 15 minutes.
Remove from oven, transfer to a cutting board and cut on the diagonal into 1/2 inch thick pieces.
To Serve: Serve with a creamed yam or roast potatoes and a garden salad.
