Tuna and corn mini quiches

Ingredients

  • 2 tin(s) Grace Tuna
  • 1/2 cup Grace Whole Kernel Corn
  • 2/3 cup cottage cheese
  • 2/3 cup chopped sweet peppers
  • 5 eggs
  • 2 spring onions finely chopped
  • Caribbean Tradition Black Pepper
  • 3 oz cheddar grated

Tuna and corn mini quiches Directions

  1. Preheat oven to 180c or 350f.
  2. Mix the spring onion, tuna and sweetcorn together in bowl and season with some black pepper.
  3. Put the cottage cheese and eggs into a blender and blend until smooth
  4. Gently fold this into the tuna mixture.
  5. Grease a muffin tray and spoon the mixture evenly into each space (make approx 8, but will depend of tray size)
  6. Top with the grated cheddar
  7. Place in the oven and bake for about 30 mins until cheese has melted and is golden.
  8. Enjoy!!
