Grace Full-Country Mackerel Special with Pressed Plantain

Ingredients

  • 2 tins of Grace Premium Mackerel in Tomato Sauce
  • 2 tbsp Grace Vegetable Oil
  • 1 tsp Grace Fish and Meat Sauce
  • 1 tbsp Grace Sweet and Spicy Hot Pepper Sauce
  • 1 tsp Grace Scotch Bonnet Hot Pepper Sauce
  • 2 green plantains
  • 1 small onion cut in slices
  • 2 tbsp diced sweet pepper
  • 1 stalk chopped escallion
  • 1/2 small diced tomato
  • 1 sprig(s) thyme
  • 2 cloves chopped garlic
  • Diced yellow and green scotch bonnet pepper to taste
  • Grace All Purpose seasoning to taste
  • Black pepper to taste
  • Pinch of Salt

Grace Full-Country Mackerel Special with Pressed Plantain Directions

  1. Grace Full-Country Mackerel
    • Add 1 tbsp oil to coat the pan
    • Add fresh seasoning and sauté 
    • Add Grace Premium Mackerel in Tomato Sauce and crush with wooden spoon
    • Stir with sautéed seasoning
    • Add a pinch of black pepper and Grace All Purpose Seasoning for additional flavour
    • Add Grace Sweet and Spicy Hot Pepper Sauce and Grace Fish and Meat Sauce
    • Simmer for 2 minutes
    • Add thyme leaves and stir
    • Serve with pressed plantain and garnish with sliced tomatoes and cucumber 
  2. Hansle’s Pressed Plantain
    • Slice plantain into thin strips and sprinkle with salt 
    • Heat oil in the pan
    • Fry plantain on both sides
    • Remove plantain from the pan and press in between the plantain skin until flat 
    • Place pressed plantain back in oil and fry until golden brown
    • Remove from pan and place on paper towel
    • Serve with Grace Aloe Vera Drink
