Chop onion, parsley, sweet pepper and shred carrot. Heat Grace Vegetable Oil and use to saute vegetables; allow to cool.
Flatten fish fillets with a mallet then stuff the fish fillets with cooled sauteed vegetables. Roll the fillets and fasten with toothpicks or skewers.
Melt Grace Hello Margarine then dip the stuffed fish fillets in margarine and roll in breadcrumbs.
Place fish fillets on a greased baking sheet and bake for 15-20 minutes at 180°C/350°F.
