  • 2 tablespoon(s) Grace Margarine
  • 2 clove(s) garlic, minced
  • 1/4 cup(s) escallion, chopped
  • 1 sprig(s) thyme, chopped
  • 2 tablespoon(s) Grace Jerk Seasoning
  • 4 cup(s) chicken stock
  • 500 grams Grace Long Grain Rice
  • 2 cup(s) Grace Chicken Vienna Sausage, thinly sliced
  • 1/4 cup(s) peanuts, chopped

Jerk Rice with Vienna Sausage & Peanuts Directions

  1. Heat a heavy saucepan over medium flame.  Add margarine and allow to melt; saute the minced garlic, chopped escallion, thyme and the Grace Jerk Seasoning.
  2. Add chicken stock and bring to a boil.  Add Grace Rice, stir and return to a boil.  Lower flame and allow rice to steam for 30 minutes or until grains are tender.
  3. Fold in the sliced Grace Chicken Vienna Sausage and the crushed peanuts and ensure they are evenly distributed.  Cover and allow to heat for about three minutes.
  4. Remove from flame and serve hot.

    Method Note : To make chicken stock, dissolve 1 packet Grace Cock Soup Mix with 4 cups boiling water.  Stir and use as directed.

    To Serve:  Serve with a garden salad.
