  • 4 cup(s) sweet potatoes
  • 1 can(s) Grace Coconut MIlk
  • 4 cup(s) water
  • 1/4 cup(s) Grace Margarine, melted
  • 2 1/4 cup(s) brown sugar
  • 1 cup(s) raisins, soaked
  • 2 teaspoon(s) vanilla essence
  • 1/2 cup(s) flour
  • 1 1/2 cup(s) cornmeal
  • 2 teaspoon(s) nutmeg
  • 2 teaspoon(s) cinnamon powder
  • 1 teaspoon(s) lime rind, grated
  • 1 1/2 teaspoon(s) salt
  • 2 tablespoon(s) lime juice
  • 2 tablespoon(s) white rum

Sweet Potato Pudding with Cornmeal Directions

  1. Peel and grate sweet potatoes.  Pre-heat oven to 180°C (350°F).
  2. Combine Grace Coconut Milk, water, Grace Hello Margarine, sugar, raisins and vanilla, and stir.
  3. Mix together flour, cornmeal, nutmeg, cinnamon, lime rind and salt; set aside.
  4. Empty flour mixture into the grated potatoes. Gradually add the combined liquid and stir to remove lumps.
  5. Pour mixture into a well greased baking pan and bake for approximately 2 hours.

    To Serve: Allow pudding to cool; then combine lime juice with rum and sprinkle over pudding.
