Combine salt, black pepper, minced garlic, chopped onion, and flour and rub into meat.
Melt Grace Hello Margarine in roasting pan on top of the stove, then add onions and meat. Sear on all sides until well browned.
Place the rashers of bacon on top of the meat, fastening with toothpicks.
Pour wine over the meat.
Roast the meat at 180°C/350°F in the oven for 15-25 minutes per pound, depending on the degree of tenderness desired, while basting occasionally.
About 45 minutes before the meat is ready, add the potatoes and tomatoes. Water or stock may be added, if required.
YIELD: 12-14 slices.
RECIPE NOTE: Sear - To cook meat on high heat on each side until browned.
TO SERVE: Place the meat, potatoes and tomatoes on a platter and serve immediately.
