  • 4 large eggs
  • 1/2 cup(s) water or milk
  • 1/2 teaspoon(s) salt
  • 1 medium onion, chopped
  • 1 stalk(s) escallion, chopped
  • 1 small sweet pepper, chopped
  • 1 teaspoon(s) scotch bonnet pepper, chopped
  • 1/4 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 2 tablespoon(s) Margarine

Scrambled Eggs with Frankfurters Directions

  1. Break eggs in a bowl, add water or milk and salt and whisk well.
  2. Cut each frankfurter in half lengthwise, then cut into bite-size pieces.
  3. Combine pieces of frankfurters and seasonings along with the egg mixture until evenly combined.
  4. Heat a skillet over medium heat, add the Grace Hello Margarine and allow to melt.
  5. Add the egg mixture and cook over low heat stirring frequently with a wooden spoon until the mixture sets.

    To Serve: Serve with fried dumplings or slices of bread, a fruit plate and Roma Hot Chocolate.
