  • 4 rasher(s) Grace Streaky Bacon
  • 1/2 cup(s) onion, chopped
  • 1/4 cup(s) green sweet pepper, chopped
  • 1/4 cup(s) Grace Mayonnaise
  • 1/4 cup(s) milk
  • 8 large eggs
  • 2 tablespoon(s) chopped canned pimiento

Eggs El Rancho Directions

  1. In a heavy skillet, cook diced Grace Streaky Bacon with chopped onion and green sweet pepper until crisp and tender. Drain off excess fat.
  2. In a bowl combine the Grace Mayonnaise with the milk, and stir in the slightly beaten eggs and chopped pimiento.
  3. Pour over bacon vegetable mixture. Cook slowly stirring occasionally until eggs are set.

    Serve immediately with slices of toast.
