  • 3/4 pound(s) cake and pastry flour
  • 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) baking powder
  • 2 teaspoon(s) cinnamon powder
  • 1/2 teaspoon(s) salt
  • 4 ounce(s) Margarine
  • 10 ounce(s) granulated sugar
  • 3 medium eggs
  • 2 cup(s) mango, peeled, pureed
  • 1/2 cup(s) dessicated coconut
  • 1/2 cup(s) raisins

Mango Tea Bread Directions

  1. Sift together flour, baking soda, baking powder, cinnamon powder and salt.
  2. With an electric mixer, cream Grace Hello Margarine, sugar and eggs until light and fluffy.
  3. Fold the dry ingredients into the creamed mixture in three batches.
  4. Fold in the mango, raisins and two-thirds of the coconut.
  5. Scrape batter into the greased loaf pan and sprinkle on the remaining coconut.
  6. Bake in a pre-heated oven at 180°C (350°F) for 50 minutes.
  7. Allow to cool then decorate with glazed mango slices.
