In a large saucepan dissolve Grace Coconut Milk Powder in water and bring to a boil.
Add crushed escallion, whole scotch bonnet pepper, thyme, diced bananas and Irish potatoes and leave to boil for 10 minutes.
Remove escallion, thyme and pepper.
Add Grace Mixed Vegetables, Grace Premium Mackerel and salt and allow to simmer for 3-5 minutes.
Remove from flame, garnish and serve hot.
To Serve: Garnish with a sprig of fresh thyme and tomato wedges.
