  • 4 tablespoon(s) Grace Vegetable Oil
  • 1/2 tablespoon(s) curry powder (optional)
  • 1 medium onion, chopped
  • 1 sprig(s) thyme, chopped
  • 2 clove(s) garlic, minced
  • 1 stalk(s) celery, chopped (optional)
  • 2 teaspoon(s) scotch bonnet hot pepper, chopped
  • 1 dozen(s) ackees, boiled
  • 2 can(s) Grace Mackerel in Tomato Sauce, drained and flaked, 7 oz.
  • 1/2 teaspoon(s) black pepper

Fiery Ackee & Mackerel Toss Directions

  1. Heat Grace Vegetable Oil in a large skillet.  Add curry powder, onion, thyme, garlic, celery and scotch bonnet pepper and saute for about one minute.
  2. Mix in the boiled and drained ackees, then fold in the flaked Grace Mackerel.  Sprinkle with black pepper.

    To Serve:  Serve with fried dumplings, fried bammy or with boiled green banana and tomato slices.
