In a mixing bowl add fish, fish seasoning, salt and pepper. Stir to ensure that all the seasoning is properly distributed.
Cover and place in the refrigerator for 2 hours.
In a non-stick saute pan, add oil and heat over medium flame; lightly flour the fish and place in the oil. Sear both sides until golden brown. This should take about 2-3 minutes on each side.
Remove and place on paper towel to remove excess oil.
To Serve: Serve with Scotch Bonnet Beurre Blanc.
