De-bone chicken breast, cut in small cubes, wash in a 1/4 cup vinegar and 4 cups of water solution.
Finely chop onion and garlic, chop pineapple and mushroom, dice carrot.
Season chicken with salt and pepper.
In a wok, heat Grace Vegetable Oil, add half of the garlic and saute for 1 minute.
Add chicken and keep stirring, as soon as chicken is cooked, add soy sauce, pineapple, mushroom, carrot, vinegar, sugar and stock.
Add the remaining garlic and onion and allow to simmer for 10 minutes.
Method Note: To Make Stock - Add 1/2 packet Grace Cock Soup Mix to 2 cups boiling water, stir and leave to stand for 10 minutes, strain and use as directed.
