  • 1 cup(s) beer
  • 2 tablespoon(s) soy sauce
  • 1 tablespoon(s) ginger, grated
  • 1 tablespoon(s) brown sugar
  • 2 tablespoon(s) Grace Guava Jam
  • 1 cup(s) Grace Tropical Rhythms, Guava Pineapple
  • 1 pound(s) chicken breast, cut into strips
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 3 tablespoon(s) Grace Vegetable Oil
  • 4 whole lettuce leaves
  • 1/2 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1 medium beet, shredded
  • 2 slice(s) orange, cut into halves
  • 2 slice(s) tomato, cut into halves

Tropical Island Salad with Guava Glazed Chicken Directions

  1. Combine beer, soy sauce, ginger, sugar, Grace Guava Jam and Grace Tropical Rhythms, Guava Pineapple in a blender and blend for 30 seconds.
  2. Pour into a saucepan and put to reduce by a half or until the mixture thickens.
  3. Cut chicken breast into thin strips, wash then season with salt and pepper.
  4. Heat Grace Vegetable Oil in a fry pan and use to stir fry the seasoned chicken breast for about 5 minutes.
  5. Combine stir fried chicken breast with the reduced sauce and simmer for about three minutes.
  6. Remove from flame and set aside.

    To Serve: Arrange lettuce leaves on a serving plate, add cucumber slices, shredded carrots and beet. Spoon on the Guava Glazed Chicken Breast and garnish with orange and tomato slices.
