  • 1 pound(s) fish fillets, grey snapper
  • 1/2 cup(s) Grace White Vinegar
  • 4 cup(s) water
  • 1 tablespoon(s) Grace Caribbean Traditions Fish Seasoning
  • 1 cup(s) flour
  • 1 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 1 teaspoon(s) Grace Caribbean Traditions Garlic Powder
  • 1 cup(s) Grace Vegetable Oil
  • 1 medium cucumber, cubed
  • 1 large purple onion, cubed
  • 1 medium red sweet pepper, cubed
  • 1 medium green sweet pepper, cubed
  • 1 medium yellow sweet pepper, cubed
  • 1 large carrot, cubed
  • 1 medium tomato, cubed
  • 1 cup(s) Grace Tomato Ketchup
  • 1/2 cup(s) Grace Fish and Meat Sauce
  • 2 tablespoon(s) Grace Jerk Seasoning

Fish and Vegetable Kebabs Directions

  1. Clean fish in a mixture of Grace White Vinegar and water.
  2. Cut fish fillets into cubes and season with Grace Caribbean Traditions Fish Seasoning.
  3. Set aside to marinate in the refrigerator.
  4. In a bowl combine flour, Grace Caribbean Traditions Black Pepper and Grace Caribbean Traditions Garlic Powder and use to coat fish, shake off excess flour mixture.
  5. Heat Grace Vegetable Oil and sear fish on all sides.
  6. Drain on absorbent paper and set aside to cool.
  7. Insert pieces of fish, cubed cucumber, purple onion, fish, red sweet pepper, fish, green sweet pepper, fish, yellow sweet pepper, fish, cucumber, carrot and tomato onto bamboo skewers or kebab sticks.
  8. Place kebabs on grill and allow to grill for five minutes.
  9. Mix Grace Tomato Ketchup, Grace Fish and Meat Sauce, Grace Jerk Seasoning.
  10. Using a pastry brush to spread mixture over kebabs.

    Method Note : Sear- Cooking the surface of the meat at high temperature until caramelized (brown) on all sides.

    To Serve: Serve on a bed of Riced Yam.
