  • 1 large egg
  • 1 teaspoon(s) vanilla
  • 1 cup(s) Grace Coconut Milk
  • 1/4 cup(s) Margarine, melted
  • 3 tablespoon(s) ginger
  • 1 1/2 cup(s) sugar
  • 3 cup(s) flour
  • 1 tablespoon(s) baking powder
  • 2 tablespoon(s) cinnamon powder
  • 1/4 teaspoon(s) salt
  • 2 cup(s) coconut, shredded
  • 3 whole green cherries
  • 3 whole red cherries

Grace Coconut Ginger Bun Directions

  1. Pre-heat oven to 180°C (350°F) and grease a 30 cm x 13 cm x 6 cm loaf tin.
  2. In a large mixing bowl, beat eggs and vanilla, then add Grace Coconut Milk, melted Grace Hello Margarine, grated ginger and sugar. Mix until all the granules have dissolved.
  3. In another bowl, combine all dry ingredients, shredded coconut and soaked raisins.
  4. Add 1/2 the dry ingredients to the liquid mixture and mix, then add remainder of the dry ingredients and mix well.
  5. Scrape batter into the greased loaf tin.
  6. Decorate with whole red and green cherries and bake for an hour or until done.

    Method Note: Soaked fruits may be substituted for raisins.
