In a sauce pot add water and salt, allow to come to a boil.
Add carrots, blanch, refresh and set aside. Add string beans, blanch, refresh and set aside.
In a saute pan, add butter and oil, heat over a medium flame. Add onions and saute for 1 minute.
Add carrots and string beans, saute for 2 minutes. Add parsley and season with salt and pepper to taste.
Method Note: Julienne, to cut into thin strips.
