In a saute pot over medium flame add oil and saute onion, garlic, scotch bonnet pepper and carrot.
Saute vegetable for 1 minute then add pak choi, salt and black pepper. Cover and continue to cook for another 3 minutes.
Add tomato, sweet pepper, escallion, thyme and butter; stir, cover and continue cooking for another 3 minutes or until the stalks of the pak choi are tender.
