  • 1 teaspoon(s) salt
  • 6 cup(s) hot water
  • 3 stalk(s) escallion
  • 3 clove(s) garlic
  • 1 1/2 pound(s) trotters
  • 1 teaspoon(s) black pepper
  • 1 large onion
  • 1 sprig(s) thyme
  • 1/4 cup(s) Grace Vegetable Oil
  • 1 can(s) Grace Butter Beans

Trotters 'n' Beans Directions

  1. Cut trotters in small pieces, crush garlic and finely chop escallion.
  2. Blanch trotters in boiling water for 2-3 minutes.
  3. Drain off water and season trotters with salt, pepper and other seasonings.
  4. Heat Grace Vegetable Oil in a heavy pot, and brown pieces of trotters. Pour off excess fat.
  5. Return trotters to pot with additional seasonings.
  6. Cover and simmer gently for 3-4 hours, or until tender, or pressure cook to shorten cooking time.
  7. Add additional liquid, if necessary, and correct seasoning.
  8. Add Grace Butter Beans and allow to simmer for a few minutes.
