  • 2 1/2 pound(s) sweet potato
  • 2 whole egg yolks
  • 3/4 cup(s) Grace Coconut Milk
  • 1 cup(s) all purpose flour
  • 6 cup(s) water
  • 1 packet(s) Grace Cock Soup Mix
  • 3 tablespoon(s) Grace Vegetable Oil
  • 1 medium onion, diced
  • 1 clove(s) garlic, chopped
  • 1 medium tomato, diced
  • 2 stalk(s) escallion, chopped
  • 2 tablespoon(s) basil, chopped
  • TO MAKE PESTO SAUCE:
  • 1 clove(s) garlic, minced
  • 1 teaspoon(s) basil, chopped
  • 1/4 cup(s) cream cheese
  • 1/8 cup(s) peanuts, crushed

Sweet Potato Gnocchi Directions

  1. Wash and peel sweet potato and put to bake at 350°F until done.  Potato may be cooked in the microwave in 8-10 minutes.
  2. Place the baked potato in a bowl and crush. Add the egg yolks and 1/2 cup Grace Coconut Milk and cream until the mixture becomes smooth. Fold in 1/2 cup flour and knead until smooth.
  3. Lightly flour the work surface and place the dough on it. Roll the dough to form a log and then cut in about 10 equal pieces.
  4. Put 6 cups water to boil, add one packet Grace Cock Soup Mix and the remaining 1/4 cup Grace Coconut Milk.
  5. Place each gnocchi in the boiling liquid and cook for 2 minutes.  Remove immediately from the boiling liquid. (boiling longer than for 2 minutes will make them tough).
  6. Heat Grace Vegetable Oil and saute the onion, garlic, tomato, escallion and basil. Add the Pesto Sauce and fold in the Gnocchi. 

    TO SERVE:
      Serve with grilled chicken breast and homemade pesto sauce

    TO MAKE PESTO SAUCE: 
    Combine all ingredients in a blender and blend until smooth.
