Wash and peel sweet potato and put to bake at 350°F until done. Potato may be cooked in the microwave in 8-10 minutes.
Place the baked potato in a bowl and crush. Add the egg yolks and 1/2 cup Grace Coconut Milk and cream until the mixture becomes smooth. Fold in 1/2 cup flour and knead until smooth.
Lightly flour the work surface and place the dough on it. Roll the dough to form a log and then cut in about 10 equal pieces.
Put 6 cups water to boil, add one packet Grace Cock Soup Mix and the remaining 1/4 cup Grace Coconut Milk.
Place each gnocchi in the boiling liquid and cook for 2 minutes. Remove immediately from the boiling liquid. (boiling longer than for 2 minutes will make them tough).
Heat Grace Vegetable Oil and saute the onion, garlic, tomato, escallion and basil. Add the Pesto Sauce and fold in the Gnocchi.
TO SERVE: Serve with grilled chicken breast and homemade pesto sauce.
TO MAKE PESTO SAUCE: Combine all ingredients in a blender and blend until smooth.
