Cook Grace Rice and Grace Frankfurters. Chop parsley and finely chop onion. Thinly slice green sweet pepper.
Put the olive oil, cider vinegar, mustard, salt and pepper, chopped parsley and onion in a mixing bowl; and whisk well together.
Cut the frankfurters in thin slices, roughly chop the shelled eggs, slice the tomatoes and dice the cucumber.
Mix all ingredients together.
To Serve: Chill and serve on crisp lettuce leaves.
