Wash all fruits and vegetables thoroughly.
Cut oranges into segments, peel beets, cut into small 3 mm (1 or 8 inch) cubes and blanch, finely shred carrots, coarsely shred cabbage, cut sweet pepper into julienne and cut Grace Pineapple Slices into pieces.
Arrange orange segments around the edge of a platter, overlapping segments.
Arrange the remaining fruits and vegetables in lengthwise rows, keeping each item separate.
To Make Pineapple Sauce:
Bring all ingredients to a boil in a saucepan.
Reduce until mixture becomes a syrupy consistency.
Chill and serve with salad.
Method Note: Blanch - To immerse briefly in boiling water, then into icy cold water.
To Serve: Garnish with parsley. Add pineapple sauce or your favourite salad dressing.
