  • 12 whole Grace Frankfurters
  • 3 cup(s) cheddar cheese
  • 1 small crisp lettuce
  • 1 medium onion
  • 1 medium green sweet pepper
  • 1 cup(s) pancake mix
  • 1/2 cup(s) Grace Cornmeal
  • 2 teaspoon(s) chili powder
  • 1/4 teaspoon(s) salt
  • 2 large eggs
  • 1 1/2 cup(s) whole milk
  • 2 tablespoon(s) shortening, melted
  • 1 cup(s) Grace Tomato Ketchup

Frankfurter Enchiladas Directions

  1. Fry Grace Frankfurters. Shred cheese and lettuce. Chop onion and sweet pepper.
  2. Combine the pancake mix, Grace Cornmeal, 1/4 tsp. chili powder and salt.
  3. Add eggs, whole milk and melted shortening and mix until smooth.
  4. Using about 3 tablespoons of batter for each pancake, cook 12 pancakes.
  5. Keep pancakes warm in the oven while combining 2 cups of cheese, Grace Tomato Ketchup, remaining chili powder, onion and green sweet pepper.
  6. Blend well and spread on pancakes. Place a hot fried frankfurter across each prepared pancake. Sprinkle with remaining cheese and part of the shredded crisp lettuce.
  7. Fold pancakes around hot frankfurters and encase using a toothpick, then serve immediately.
