  • 1 teaspoon(s) Grace Instant Coffee
  • 1 1/4 cup(s) hot water
  • 1 cup(s) brown sugar
  • 1 cup(s) red wine
  • 1 cup(s) raisins, chopped
  • 4 tablespoon(s) Grace Guava Jam
  • 1/2 cup(s) Margarine
  • 1/2 teaspoon(s) salt
  • 1 teaspoon(s) nutmeg
  • 1 teaspoon(s) cinnamon powder
  • 2 1/4 cup(s) counter flour
  • 4 teaspoon(s) baking powder
  • 2 tablespoon(s) Grace Browning
  • 2 tablespoon(s) brandy

Eggless Fruit Cake Directions

  1. Mix Grace Instant Coffee in 1 1/4 cups of hot water and set aside.
  2. Combine sugar, mixed Grace Instant Coffee, red wine, chopped raisins, Grace Guava Jam, Grace Hello Margarine, salt, nutmeg and cinnamon powder and bring to a boil.
  3. Reduce flame and allow to simmer for 2 minutes. Remove from flame and allow to cool.
  4. Combine counter flour and baking powder, make a well in the center and pour in the cooled liquid mixture.  Mix in the Grace Browning.
  5. Scrape mixture into a greased and lined 10" cake pan.
  6. Place cake pan in a metal container 1/3 full with water and place on the upper shelf of a pre-heated oven 180°C/350°F and bake for 50 minutes or until done.
  7. Allow cake to cool, then spoon on the brandy.

    Yield: 8 slices
