In a large skillet, heat 1 Tbsp. Grace Vegetable Oil. Pour in the whisked eggs and scramble. Remove eggs and set aside.
Add remaining 2 Tbsps. Grace Vegetable Oil to the skillet and saute ginger, garlic, onion, Grace Corned Beef and toss well.
Add diced carrot, green and red sweet peppers, escallion and Grace Whole Kernel Corn and toss well.
Add cooked rice, scrambled eggs, soy sauce and all purpose seasoning and toss well.
Serve immediately.
