  • 2 cup(s) flour
  • 1 teaspoon(s) nutmeg, grated
  • 2 teaspoon(s) baking powder
  • 2 tablespoon(s) Grace Coconut Milk Powder
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) cinnamon powder
  • 1 tablespoon(s) sugar
  • 1 cup(s) milk
  • 3 large eggs
  • 2 teaspoon(s) vanilla
  • 1/2 cup(s) Grace Vegetable Oil
  • 1 cup(s) Dasheen, cut in cubes, boiled, crushed
  • Banana Pimento Syrup
  • 2 large ripe bananas, crushed
  • 1 cup(s) water
  • 1/2 cup(s) sugar
  • 2 whole pimento berries

Dasheen Pancake Directions

  1. In a bowl combine flour, nutmeg, baking powder, Grace Coconut Milk Powder, salt, cinnamon powder and sugar.
  2. In another bowl, combine coconut milk, eggs, vanilla and Grace Vegetable Oil. Whisk well until blended.
  3. Add dasheen and beat in well, then add dry ingredients and continue whisking until fully combined.
  4. In a small skillet heat Grace Vegetable Oil, use a ladle to pour in mixture, to cover the bottom of skillet.
  5. Lower heat and cook until golden brown.
  6. In another skillet heat Grace Vegetable Oil and then saute onions, escallion, thyme, sweet peppers.
  7. Add Grace Vegetable Vienna Sausage and Grace Baked Beans and toss.

    Banana Pimento Syrup
  8. Bring water to boil.
  9. Add sugar over low flame simmer until it becomes a syrupy consistence.
  10. Add crushed ripe banana, crushed pimento berries simmer and reduce for 15-20 minutes.

    To Serve: Serve with Banana Pancake Syrup and Grace Baked Beans and Grace Vienna Sausage.
