  • 3 cup(s) counter flour
  • 1 packet(s) Grace Coconut Milk Powder
  • 1 tablespoon(s) baking powder
  • 1 1/2 teaspoon(s) nutmeg
  • 1/2 cup(s) Prima Margarine
  • 1 cup(s) dark sugar
  • 1/4 cup(s) raisins, soaked
  • 1 large egg, beaten
  • 4 ounce(s) water or milk
  • 1 teaspoon(s) vanilla
  • 4 whole maraschino cherries

Rock Cakes/Buns Directions

  1. Combine flour, Grace Coconut Milk Powder, baking powder and nutmeg and mix for even distribution.
  2. Add Grace Prima Margarine and use a dough blender or your finger tips to gently rub the margarine into dry mixture until it resembles fine breadcrumbs.
  3. Mix in the dark sugar and soaked raisins using a wooden spoon.
  4. Combine beaten egg, water or milk and vanilla; make a well in the center and pour in the liquid.
  5. Combine the mixture using two forks. Do not over mix!
  6. Drop rock buns by spoonfuls onto a greased baking tray and bake at 180°C/350°F for 26 minutes.  Remove from oven and cool on a cooling rack.
  7. Rinse the maraschino cherries and cut each into 4 pieces.  Use one piece of cherry to decorate each rock bun.

    Mix in 1 cup shredded coconut along with the raisins to provide additional texture and flavour.
    To make Cheesy Rock Buns, omit raisins and coconut and substitute with 4 ozs Anchor Cheddar Cheese.

    Milk may be made by dissolving Anchor Milk Powder in water, then use as desired.
