  • 2 pound(s) sweet potatoes
  • 1/4 cup(s) prunes
  • 1 pound(s) carrot
  • 8 whole Grace Frankfurters
  • 3/4 cup(s) Grace Orange Juice
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) black pepper
  • 1 large onion, chopped
  • 3 tablespoon(s) lime juice
  • 2 tablespoon(s) brown sugar

Pot-O-Franks Directions

  1. Heat oven to 375°F/190°C.
  2. Peel and cut sweet potatoes into chunks, chop prunes, cut carrots crosswise and cut each Grace Frankfurter into five pieces.
  3. Place potatoes in casserole dish. Pour on Grace Orange Juice, sprinkle on salt and pepper. Cover and bake for 30 minutes.
  4. Remove cover and layer with prunes, carrots, chopped onions and frankfurters.
  5. Sprinkle lime juice and brown sugar all over.
  6. Bake uncovered for 10-15 minutes or until vegetables are tender.
