  • 2 pound(s) irish potatoes, peeled, shredded
  • Garnish
  • 2 medium eggs, beaten
  • 1 teaspoon(s) Grace Vegetable Oil
  • 1/4 cup(s) flour
  • 2 piece(s) cabbage leaves, shredded
  • 1/8 teaspoon(s) salt
  • 1 small green sweet pepper, julienne
  • 1/8 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 1/4 cup(s) Grace Vegetable Oil

Potato Pancake Directions

  1. In a large bowl, combine shredded potatoes, beaten eggs, flour salt and Grace Caribbean Traditions Black Pepper. Mix well.
  2. Heat frying pan and add Grace Vegetable Oil.
  3. Drop batter by using heaped teaspoons and fry on both sides until done.

  4. In a pan, heat Grace Vegetable Oil, saute cabbage and bell peppers.

    To Serve: Place sauteed cabbage and peppers on the base of a dinner plate. Arrange Potato Pancake on the sauteed cabbage. Top with Pan Fried Fish Fillet, then spoon on the Citrus Sauce.
