Jamaica’s Chef Andre cooks up cuisine at demonstration

A group of foodies gathered around Food Network’s Chopped Champion, Chef Andre Fowles, as he showed off his cuisine skills during a demonstration on how to prepare three dishes with sauces from Grace Foods, during a recent exclusive tasting event at the Midtown Manhattan offices of Finn Partners.

Fowles, the Brand Ambassador for Grace Foods, and owner of Everything Food, flawlessly, prepared, Grace BBQ pork sliders and sea salt potato chips, Grace Jerk Honey Wings, and Crispy Chili Shrimp with Grace Jerk Cream.

He started off with the crispy shrimp, using the jerk marinade, not too spicy, with balanced flavors, and paired with the sauce to compliment the sweetness of the shrimp.

The two-time Food Network winner, then used the Grace Jerk sauce to create finger-licking Jerk Chicken wings, brown on the outside and tender on the inside. The spicy Jerk sauce highlighted the seasonings, and blended into the meat for a delicious taste.

Next up, was Pork Sliders, which made use of the rich dark BBQ sauce in a pulled-pork style cooking and finished with sea salt and potato chips. He topped off the little buns with minature Jamaica flags to give the presentation that homey, nostalgic feel.

The award-winning chef was impressive, giving his audience a brief history of the authentic Jamaica staple that he grew up eating in his grandmother’s dishes in Kingston, Jamaica.

The Grace Foods brand founded in 1922 in Kingston, Jamaica, is a great fit for the hometown boy who has made it big in the United States, but still has a strong connection to his Jamaican roots, using elements of his country to show his cooking style, and love of food, and more food, said Chef Fowles.

He is passionate about using the Grace Brand that he says is the backbone of Jamaican cuisine, a testament to him ever so often desire to share with the world, when the sauce is necessary in his cooking.

He said the Grace Brand has always tried to make cooking more convenient, a product that “accentuates our cuisine.”

The Grace Foods sauces are Jamaican Style BBQ Sauce, Jamaican Style Jerk Seasoning, and Jamaican Style Marinade.

Chef Andre Fowles is quite busy these days spotlighting his great cooking at food demonstrations around the New York area, festivals and on the Food Network channel.
