Homemade Easter Bun

Step 1: MIX THE DOUGH

Combine flour, sugar, yeast, mixed spice and cinnamon in a large bowl. Make a well in the centre. Pour in warm water, melted butter, beaten eggs and Grace Browning Sauce. Mix until a soft, slightly sticky dough forms.

Step 2: KNEAD AND PROVE

Turn dough onto a lightly floured surface. Knead for 8–10 minutes until smooth and elastic. Fold in dried fruits evenly. Place in a greased bowl, cover with a damp cloth and leave in a warm place until doubled — about 1 hour.

Step 3: SHAPE

Punch down risen dough. Shape into a loaf and place in a greased 900g / 2lb loaf tin. Cover and allow to prove again for 30 minutes.

Step 4: BAKE

Bake at 180°C / 350°F for 50–60 minutes until deep golden-brown. If top browns too quickly, cover loosely with foil. A skewer inserted in the centre should come out clean.

Step 5: GLAZE AND COOL

Brush hot bun with a sugar glaze (2 tbsp sugar dissolved in 2 tbsp hot water) for a glossy finish. Cool on a wire rack for at least 30 minutes before slicing. Serve with Grace Processed Cheese.

Serving instructions

Stout gives this bun its authentic Caribbean character — do not substitute. Grace Browning Sauce delivers the deep mahogany colour and a subtle complexity. Baking bun in loaf pan is non negotiable.
