Traditional Sweet Potato Pudding

Step 1: PREPARE THE SWEET POTATO

Preheat oven to 180°C / 350°F. Peel and finely grate sweet potatoes into a large mixing bowl. Fine grating is essential — coarse grating produces a stringy pudding.

Step 2: MIX THE BATTER

Add Grace Coconut Milk, brown sugar, flour, beaten eggs, melted butter, vanilla extract, mixed spice, cinnamon and salt to the grated sweet potato. Stir thoroughly until a thick, well-combined batter forms.

Step 3: PREPARE THE PAN

Grease a 23cm / 9-inch round baking tin generously. Pour the batter in and smooth the top level with a spatula.

Step 4: BAKE

Bake at 180°C / 350°F for 1 hour 15 minutes until the centre is fully set and the top is deep golden-brown. Insert a skewer — it should come out clean. If the top darkens too quickly, cover loosely with foil.

Step 5: COOL AND SERVE

Allow pudding to cool in the tin for at least 20 minutes before slicing — it firms considerably as it cools. Serve warm or at room temperature. The flavour deepens overnight.

Serving instructions

Grace Coconut Milk gives this pudding its authentic Caribbean sweetness and richness. Finely grating the potato is non-negotiable. The pudding keeps refrigerated for up to 5 days and improves in flavour each day.
