Special Sweet and Sour Chicken

Step 1: COAT AND FRY THE CHICKEN

Season chicken chunks with salt and pepper. Coat in flour, shaking off excess. Heat oil to 180°C / 350°F. Fry chicken in batches 5–6 minutes until golden and cooked through. Drain on paper towels.

Step 2: MAKE THE SWEET AND SOUR SAUCE

Whisk together Grace Ketchup, white vinegar, sugar and Grace Soy Sauce in a bowl. Taste — it should be a balanced sweet-sour-savoury combination. Adjust with more ketchup for sweetness or vinegar for tang.

Step 3: COOK THE VEGETABLES

Heat 1 tbsp oil in a wok or large pan over high heat. Add bell peppers and stir fry 2 minutes until just tender with crunch remaining.

Step 4: BUILD THE SAUCE

Pour the sweet and sour sauce into the wok with the peppers. Add pineapple chunks. Bring to a boil. Add 1 tbsp cornstarch mixed with 3 tbsp water and stir until the sauce thickens and turns glossy.

Step 5: COMBINE AND SERVE

Add fried chicken to the sauce and toss to coat all pieces. Serve immediately over steamed white rice. The chicken should remain crispy — do not leave it sitting in the sauce for too long.

Serving instructions

Frying the chicken separately and adding to the sauce at the last moment keeps it crispy. Grace Ketchup gives the sauce its authentic colour and sweet foundation while Grace Soy Sauce adds depth and umami. Serve immediately.
