Old Fashioned Bread Pudding

Step 1: SOAK THE BREAD

Cover bottom of baking dish with Grace Strawberry Jam. Place cubed bread in a large deep baking dish. Whisk together milk, Grace Coconut Milk, eggs, sugar, melted butter, vanilla, cinnamon and nutmeg. Pour over bread. Scatter raisins throughout. Press bread down to submerge. Soak for 30 minutes minimum.

Step 2: PREPARE FOR BAKING

Preheat oven to 175°C / 350°F. Press bread down once more. Add a splash more milk if any bread sits above the liquid.

Step 3: BAKE

Bake for 40–45 minutes until the top is golden-brown, custard is set and there is just a slight wobble in the centre. A skewer inserted should come out mostly clean.

Step 4: REST

Remove from oven when set. Allow to rest for 10 minutes — the pudding continues to set as it cools. The top should be golden and slightly caramelised.

Step 5: SERVE

Serve warm in generous spoonfuls, with a drizzle of rum sauce, caramel or vanilla ice cream. Excellent reheated the following day.

Serving instructions

Stale bread is essential — fresh bread becomes too mushy. Hard dough bread gives the most authentic Jamaican result. Grace Coconut Milk lifts this classic to another level. Do not rush the soaking — 30 minutes minimum.
