Jerk BBQ Pork

Step 1: SEASON THE PORK

Rub pork shoulder all over with Grace Jerk Seasoning, garlic and brown sugar. Cover and marinate overnight.

Step 2: SEAR

Heat a heavy pot and sear the pork on all sides with Grace Browning until deeply coloured.

Step 3: SLOW COOK

Add scotch bonnet and 1 cup water, cover, and cook low at 300°F for about 3 hours until fork-tender.

Step 4: GLAZE

Shred the pork, mix with BBQ sauce and vinegar, and return to the oven at 400°F for 10 minutes to caramelize.

Step 5: SERVE

Pile onto plates or buns with pickled onions and extra jerk BBQ sauce on the side.

Serving instructions

Low and slow is non-negotiable here — resist the urge to rush the braise or the pork won't shred cleanly.
