Jamaican Style Oxtail with Butter Beans

Step 1: SEASON & MARINATE

Coat oxtail with Grace Browning Sauce, Grace All-Purpose Seasoning, garlic, thyme and scallion. Marinate minimum 2 hours — overnight preferred.

Step 2: BROWN THE OXTAIL

Heat oil in a heavy Dutch pot over high heat. Brown oxtail in batches, 5–6 min per side, until deeply caramelised all over. Remove and set aside.

Step 3: BUILD THE BRAISE

Sauté onion 3 min. Return oxtail. Add Worcestershire sauce, whole scotch bonnet and enough cold water to cover halfway. Bring to a rolling boil.

Step 4: SLOW BRAISE

Reduce to lowest heat. Cover tightly — do not lift the lid. Cook 2.5–3 hours until oxtail is completely tender and meat pulls freely from the bone.

Step 5: ADD BEANS & FINISH

Add drained Grace Butter Beans. Cook uncovered 20 min to thicken gravy. Remove scotch bonnet. Skim fat. Season and add Grace Fish and Meat Sauce. Serve over white rice.

Serving instructions

Never rush the braise. Pressure cooker: 1 hour high pressure. Grace Butter Beans go in at the end only. Grace Browning Sauce delivers the authentic colour. Make ahead.
