Jamaican Beef Patties

Step 1: MAKE THE PASTRY

Combine flour, turmeric and ½ tsp salt. Rub in cold butter until mixture resembles breadcrumbs. Add ice-cold water gradually into a firm dough. Refrigerate 30 min.

Step 2: COOK THE FILLING

Brown ground beef, breaking it up. Add onion, garlic, scotch bonnet and Grace All-Purpose Seasoning. Cook 8 min. Stir in breadcrumbs and 3 tbsp water. Cool completely.

Step 3: ROLL & FILL

Divide pastry into 12 balls. Roll each into a thin 15cm / 6-inch circle. Spoon 2 tbsp filling onto one half, leaving a 1cm / ½-inch border.

Step 4: SEAL & CRIMP

Fold pastry over filling. Press edges firmly and crimp with a fork. Brush with egg wash. Refrigerate 15 min before baking.

Step 5: BAKE

Bake at 200°C / 400°F for 20–25 min until deep golden. Rest 5 min before serving. Best eaten warm.

Serving instructions

Cold butter and ice water essential for a flaky crust. Cool the filling completely before filling or pastry goes soggy. Grace All-Purpose Seasoning perfectly balances the beef. Freezes brilliantly unbaked.
