Jamaican Style Banana Bread

Step 1: PREPARE

Preheat oven to 175°C / 350°F. Grease and flour a 900g / 2lb loaf tin. Mash very ripe bananas with a fork until almost smooth — small lumps add texture.

Step 2: MIX WET INGREDIENTS

Whisk together melted butter, brown sugar, beaten eggs, Grace Coconut Milk and vanilla extract. Stir in the mashed bananas until well combined.

Step 3: COMBINE DRY INGREDIENTS

Sift flour, baking soda, cinnamon and nutmeg together in a separate bowl.

Step 4: FOLD TOGETHER

Pour wet ingredients into dry and fold gently until just combined — do not overmix. A few streaks of flour are fine. Overmixing makes tough banana bread.

Step 5: BAKE AND COOL

Pour into prepared loaf tin. Bake for 50–60 minutes until a skewer inserted in the centre comes out clean. Cool in tin 10 minutes then turn out onto a wire rack. Slice when fully cool.

Serving instructions

The riper the bananas the sweeter and more flavourful the bread — black-spotted bananas are ideal. Grace Coconut Milk adds the authentic Caribbean richness. Keeps well wrapped at room temperature for 3 days or frozen for 3 months.
