Fancy's Jamaican Steamed Fish

Step 1: SEASON THE FISH

Score each fish 3 times on each side to the bone. Rub Grace All-Purpose Seasoning inside the cavity and into every score. Set aside to marinate for 10 minutes.

Step 2: BUILD THE STEAMING BASE

In a large deep pan with a tight-fitting lid, combine water or fish stock, sliced onion, chopped tomatoes, red bell pepper, whole scotch bonnet, thyme and butter. Bring to a boil.

Step 3: ADD THE FISH

Lay scored fish in a single layer over the vegetables. The fish should be partially submerged in the liquid for steaming.

Step 4: STEAM UNTIL COOKED

Cover tightly and steam over medium heat for 12–15 minutes until fish is opaque and flakes easily. Add okra in the last 5 minutes — it should remain firm and vibrant.

Step 5: SERVE

Carefully transfer fish to deep plates. Spoon the rich steaming broth and vegetables generously over each fish. Serve with white rice, hard dough bread or green bananas. The broth is the prize.

Serving instructions

Grace All-Purpose Seasoning is perfectly balanced for fish — not overpowering. Do not lift the lid during steaming. The whole scotch bonnet gives aroma without making the broth fiery. Okra added at the end keeps its texture.
