  • 4 cup(s) water
  • 1 1/2 cup(s) chocho, peeled and cut into cubes
  • 1 cup(s) seedless grapes, chopped
  • 1 1/2 cup(s) raisins
  • 1 teaspoon(s) orange rind
  • 2 cup(s) honey
  • 1/4 cup(s) soy flour
  • 2 1/2 cup(s) whole wheat flour
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) cinnamon powder
  • 1 teaspoon(s) grated nutmeg
  • 1 1/2 tablespoon(s) cornstarch
  • 2 tablespoon(s) vanilla essence
  • 2 cup(s) Grace Apple Juice
  • 1/4 cup(s) Grace Vegetable Oil
  • 1/4 cup(s) Grace Browning
  • 2 tablespoon(s) sesame seeds, optional

Vegetarian Fruit Cake Directions

  1. Pour water into a sauce pan; add cho-cho, grapes; raisins; orange rind and honey and boil until liquid is reduced to a syrupy consistency. Allow to cool.
  2. Combine dry ingredients and set aside.
  3. Combine vanilla essence, Grace Apple Juice, Grace Vegetable Oil and Grace Browning and mix well.
  4. Puree cooked fruits in a blender and add to the liquid; stir well.
  5. Add liquid ingredients to the dry ingredients and fold well.
  6. Scrape batter in a greased 12" baking pan and bake in a pre-heated oven at 180°C/350°F for 1 hour or until a skewer inserted comes out clean.
  7. After removing cake, sprinkle on sesame seeds if required.

    Yield: 12-16 slices

    Note:
    Green papaya or white inner sections of a melon can be substituted for the chocho.
    1 cup dark sugar can be used to replace honey.
