Whole Roasted Jerk Turkey

Step 1: DRY-BRINE & SEASON

Pat the turkey dry, rub Grace Jerk Seasoning and Grace Browning generously over and under the skin.

Step 2: REST OVERNIGHT

Refrigerate uncovered overnight to let the seasoning penetrate and skin dry for crisping.

Step 3: PREP FOR ROASTING

Stuff the cavity with onion and thyme; brush skin with melted butter.

Step 4: ROAST

Roast at 325°F for about 3 to 3.5 hours (based on size), basting every 45 minutes, until internal temp reaches 165°F.

Step 5: REST & CARVE

Tent with foil and rest 20–30 minutes before carving to keep the meat juicy.

An overnight uncovered rest in the fridge dries the skin so it crisps beautifully instead of steaming in the oven.
