Drain Grace Jack Mackerel and reserve the sauce.
In a bowl combine flour, granulated sugar, baking powder and Grace Caribbean Traditions All Purpose Seasoning. Use the mixture to coat the mackerel; shake off excess flour.
Heat Grace Vegetable Oil in a skillet and fry coated mackerel until golden brown. Drain on absorbent paper towel and set aside.
Jamaican Style Mackerel Sauce
Heat 2 tablespoons of vegetable oil. Add chopped escallion, onion and tomato. Saute for 2 minutes, then add the reserved sauce from the Grace Jack Mackerel and stir well.
To Serve: Plate mackerel and serve with Grace Instant Rice - Spinach. Spoon on sauce and garnish with sweet pepper rings.
