  • 1 pound(s) shrimp, de-veined and cleaned
  • 2 tablespoon(s) oyster sauce
  • 1/4 cup(s) soy sauce
  • 1 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 8 ounce(s) chicken breast, cut into small strips
  • 1 medium onion, chopped
  • 1/2 cup(s) red, green and yellow sweet peppers, julienne
  • 1/4 cup(s) tomatoes, diced
  • 1/2 teaspoon(s) scotch bonnet pepper, chopped
  • 1 teaspoon(s) salt
  • 3 tablespoon(s) Grace Vegetable Oil
  • 1/2 packet(s) Grace Streaky Bacon, cubed
  • 3 medium eggs
  • 1/4 cup(s) carrot, diced
  • 2 pound(s) rice, cooked
  • 1 tablespoon(s) Grace Prima Margarine

Patrick Brown's Special Fried Rice Directions

  1. Place shrimp in a bowl. Season with oyster sauce, 2 tablespoons soy sauce, and Grace Caribbean Traditions Black Pepper; cover and allow to marinate in the refrigerator for 15 minutes.
  2. Season chicken with onion, red, green and yellow sweet peppers, tomatoes, scotch bonnet pepper and salt.
  3. Heat a half of the Grace Vegetable Oil in a frying pan and use to brown the chicken; then add back the onion, 1/4 cup sweet peppers and tomatoes, and allow to cook until it becomes a stew.
  4. In a second frying pan, heat remaining Grace Vegetable Oil and saute shrimp for about 2 minutes or until pink in colour.
  5. Heat a large sauce pan, add bacon and fry until crisp.
  6. Add eggs and allow to set, then mix well.
  7. Combine chicken, shrimp, bacon and egg mixture.  Mix in the carrot and rice.
  8. Add Grace Prima Margarine and additional soy sauce, if necessary; then lower flame and allow to heat through for 5 minutes.

    To Serve: Serve fried rice in a bowl, and sprinkle with remaining sweet peppers as garnish.
