  • 12 1/2 cup(s) water
  • 2 cup(s) dried red peas, pre-soaked
  • 1 piece(s) ginger, crushed
  • 4 whole pimento berries
  • 3 clove(s) garlic, crushed
  • 1 packet(s) Grace Coconut Milk Powder
  • 1 cup(s) flour
  • 1/2 cup(s) Grace Cornmeal
  • 1/8 teaspoon(s) salt
  • 1 pound(s) saltfish, soaked and flaked
  • 1 packet(s) Grace One Pot Seasoning - All Purpose
  • 1 whole scotch bonnet pepper
  • 1 medium onion, chopped
  • 2 stalk(s) escallion, chopped
  • 1 sprig(s) thyme

Saltfish Stewed Peas Directions

  1. Pour 8 cups water into a pressure cooker. Add pre-soaked red peas, crushed ginger, pimento berries and crushed garlic; pressure cook for twenty five minutes.
  2. Remove pressure cooker from flame and allow to fully cool before opening. Return to flame and add 4 cups water, Grace Coconut Milk Powder, mix well and bring to a boil.

    To Make Spinners:
  3. Combine flour, Grace Cornmeal, salt and remaining water, knead until a firm dough is formed.
  4. Take small pieces of the dough and roll into spinners. Add spinners, flaked saltfish, Grace One Pot All Purpose Seasoning, whole scotch bonnet pepper, chopped onion, escallion and thyme and stir well.
  5. Cover and leave to simmer for 15 minutes or until thickened.

    To Serve: Serve with boiled Grace White Rice and a tossed salad.
