  • 1/2 pound(s) Margarine
  • 1/2 pound(s) dark sugar
  • 4 large eggs
  • 1 pound(s) all purpose flour
  • 1/4 pound(s) breadcrumbs
  • 1 tablespoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 2 teaspoon(s) cinnamon powder
  • 1 teaspoon(s) nutmeg
  • 1 teaspoon(s) mixed spice
  • 3 cup(s) soaked mixed fruits
  • 1 tablespoon(s) vanilla essence
  • 1/2 cup(s) rum
  • 3 cup(s) fruit wine
  • 3 tablespoon(s) Grace Browning
  • 1/4 cup(s) peanuts, crushed
  • 1 sheet(s) aluminium foil
  • 8 cup(s) water
  • 1 large Dutch pot

Rich Fruit Cake (Steamed) Directions

  1. Cream Grace Hello Margarine and sugar until creamy and smooth. Add eggs to the creamed mixture one at a time and beat well.
  2. Combine all dry ingredients: flour, breadcrumbs, baking powder, salt, cinnamon powder, nutmeg, mixed spice and mix well.
  3. Fold in a third of the flour mixture into the creamed mixture; adding the soaked fruits, vanilla essence, rum and fruit wine alternately with the Grace Browning and crushed peanuts. Repeat until all the flour mixture is used up.
  4. Scrape batter into a greased and lined 10" baking tin.
  5. Cover the baking tin with aluminium foil.  Place Dutch pot over medium flame with 8 cups of water and bring to a boil.  Place an empty baking pan in the water and then place the cake tin with the mixture on top; ensuring that the water level is below that of the cake.
  6. Cover the Dutch pot and allow to steam for 1 1/2 hours.
  7. Serve with Butter Brandy Sauce.
